Unit 2 Notes What is Food Science?

Key Terms Food Science Food Analogs Hypothesis Nutrition Cryogenic Liquids Theory Food Processing Food Defense Law Adulteration Food Security Variable Organic Formulations Control Farm to Table SI Units Variation Food Scientist Calibrate Conclusion Hydroponic crops Scientific Method Meta Analysis

What is Food Science Food Science is the study of the nature of food, the causes of deterioration, the principles underlying food processing, and the improvements of foods for the consuming public Caffeine Chocolate Sugar

What is Food Science The history of food science can be examined in three sections: Early Food Discoveries Industrial Revolution Government Management

What is Food Science Early Food Discoveries
Which foods were safe to eat Which foods to grow seasonally How to preserve foods Food preservation led to the earliest forms of food processing, which is any deliberate change in food occurring between its point of origin and its availability for consumption.

What is Food Science Early Food Discoveries Fun Fact: Many foods were discovered by accident. For example, it is believed that cheese was discovered as goats milk began to curdle when transported across the hot desert. The goats milk would begin to curdle because of its exposure to heat, agitation, and an enzyme called rennin.

What is Food Science Industrial Revolution The techniques used to prepare and preserve foods have been around for hundreds of years but the understanding behind the techniques were minimal. During the 1700s there were many discoveries made that advance the understanding of food processing. As a result new tools emerged to help industrialize the food industry.

What is Food Science Government Management As will most new developments, the commercial production of food led to some problems, thus government regulations put in place. Early government regulations were concerned with mainly food safety (i.e. spoilage, quality, toxicity)

What is Food Science Government Management In 1862 the USDA was established to oversee food production and agricultural research. However, it was given very little authority to enforce the safety of the food supply. As a result the Food and Drug Administration was created and given authority to regulate the food supply. The FDA now regulates 80% of the U.S. food supply.

What is Food Science Government Management Both the FDA and the USDA share the responsibilities of Food Labeling. Their job is to determine what food labels must show and say and enforcing food labeling laws.

Recent Contributions Food Science are professionals that are trained to know the biology and chemistry of foods and the processes used to improve and preserve them. In the last century food scientists have: Identified nutrients Established links between food supply and health Developed thousands of new food products and ingredients

measurement Types of Measurements: Mass Length Volume Time Temperature

Scientific method The scientific method is a system of steps used to solve problems. Scientists throughout the world us this method. The scientific method is comprised of the following steps: Ask Questions Define the Problem Conduct Research State Hypothesis Design Experiment Conduct Experiment Evaluate and Report Results
