The other documents are mandatory too but not for the registration.
You will able to provide them later.
Birth Certificate is not mandatory anymore for students who come in France less than 1 year.
CPAM will make you reminders to provide this document but you will have to ignore them

10. TEMPORARY HEALTH INSURANCE CERTIFICATE
CONGRATULATIONS YOUR REGISTRATION IS DONE!
The treatment of your file is 5 working days. After this delay you will download your certificate and upload it on your Campus Virtuel (Personal File  Social Security).
This document is necessary to complete your registration in Kedge Bordeaux
This certificate will give you same rights than the final one
MAKE SEVERAL COPIES OF IT TO USE IT IF NEEDED
You can have a private insurance for covering the delay. It’s recommended but not required
