To help you design your own muffin, it is important to understand the functions of ingredients. Flour – gives a muffin bulk and helps to make the cake rise when it is cooked. Flour – Margarine/butter – shortens and flavours the muffin. Margarine/butter Eggs – Eggs – add flavour/colour and also helps to make the muffin light in texture. Sugar – help make the muffin softer in texture and flavours the muffin. Sugar – These food ingredients are usually used to make a muffin.
