THE GREASE DILEMA
My name is Aricca and this is my husband Matthew. We are the owners of Cat Cans Portable Services of Manhattan. Our business started in Sept 2010 with portable restrooms. We have evolved over the last 7 years to include septic tank pumping, septic and lateral field installation and repair, carwash/mud pumping and grease trap pumping.

2. What is a Grease Trap?
Trap Fats, Oils or Grease (FOGs) before they enter the public sewer line
Prevent FOG from entering the sewer line and causing solidification and sticking to the sewer line
Trap small pieces of food debris and other items that are put down the drain
Properly maintained will eliminate public sewer line issues
A grease trap is designed to stop fats, oils and grease – otherwise known as F O Gs from entering the sewer line. A grease trap or larger grease interceptor prevents FOGs from entering the sewer line and causing solidification and sticking to the sewer line. It is meant to trap small food debris and other items, that are put down the drain, from entering the main sewer line. If a grease trap is properly maintained, it will help eliminate public sewer line issues.

All commercial kitchens, regardless of how big or small, are required to have a grease trap or interceptor

4. Why is maintenance important?
Keeps drains flowing smoothly
Prevents costly back-ups; in the restaurant or in a city sewer line
Eliminates odor
Routine inspections ensure the traps are working properly and protect the city sewer and waste water facility
Failure to clean/pump properly will leave solids in the bottom of the trap causing deterioration and a failing system
Regular maintenance, which can be monthly to annually, will keep the drains flowing smoothly, will help prevent backups either in the restaurant or the city sewer lines, eliminate odors…think if you left raw chicken pieces on a counter for 2 months and never cleaned it up, that is what is inside your trap. Having a routine inspection to ensure the traps are working properly and protect the city sewer and waste water facility. An accurate inspection, just like a septic inspection, cannot be done if the trap is not empty.
Failure to clean/pump a trap properly will leave the solids in the bottom of the trap which will cause deterioration and a failing system.

Do not know where to dispose of it – so they don’t maintain it. Causing grease boulders and grease lined sewer lines.
It would be counter productive to pump or dump this waste directly into the city sewer. When we started notifying people that we were local and able to provide them with this service. We were told, our employees clean it out monthly…some said they dump it in the trash dumpster, others said they dump it at night in the carwash pit, one said they dump it in their toilet!
You cannot take it directly to the waste water treatment facility…there is too much debris in it
Are you supposed to land apply it?? Probably not without a special permit from KDHE and the right area to apply
If it is too much of a hassle for them…they are just not going to maintain it and that in turn, without being held accountable with regulations, will cause boulders and grease lined sewer lines.

6. GREASE BOULDERS
This grease interceptor, gallon tank buried outside, had not been pumped in years. These are grease boulders that were inside the trap. There is a larger one, that we are not able to get out. Obviously, this trap is not operating at its capacity with this kind of blockage.

8. IN THE ROUND DEWATERING
The system uses plastic filter tiles inside a rotating, stainless steel dewatering drum to remove up to 50% of wastewater from sludge. The transportable drum – which measures 10 feet long and 90 inches in diameter – is mounted on a steel, powder- coated, roll-off frame. A roll-off truck is able to hauled the dewatered material to a compost site.
The In the Round Dewatering System uses plastic filter tiles inside a rotating, stainless steel dewatering drum to remove up to 50% of the wastewater from the sludge. The drum is able to be transported on a roll-off truck to be dumped at a compost site or an approved landfill.

9. HOW DOES IT WORK?
Dispose a 60/40 mixture of grease trap and septic tank waste through the screen – allows any trash to be separated before entering the system
Waste is then stored in an underground holding tank
Mix waste with polymer to get it to flock…IF IT WILL FLOCK, IT WILL DEWATER
Drain into dewatering drum
Finish water goes into underground finish tank…this can be plumbed straight to city sewer, once approved through the proper channels
Once full, about 10,000 gallons of waste, rotate the drum. This process takes about 24 hours
Roll-off truck hauls drum to compost area and dumps the finished product
We will dispose around 4800 gallons of septic tank to 3200 gallons of grease trap waste…this is ran through a screen to trap any trash and debris
Waste is stored in an underground holding tank
Once the tank is full…Matthew will mix the waste with a polymer in order to get it to Flock…IF IT WILL FLOCK, IT WILL DEWATER.
Once the flocking mixture is a right consistency, the waste is dumped into the dewatering drum
The finish water runs off into another 8000 gallon finish tank…which can be plumbed directly to the city sewer and run through the wastewater treatment facility (pending approval)
Once the drum is full, which is around 10,000 gallons of dewatered waste, the drum is rotated
A roll-off truck will then haul the drum to a compost site to dump the finished dried product
