How this activity was born
The activity was open just over a year ago by three former schoolmates, who twenty years after high school, decided to make their dream come true: make a good Sicilian cooking restaurant in their town. Corrado is the restaurant manager. His presence is always constant because it is his only job. He takes care of supplier relations and relations with the staff. Giuseppe cares commercial and marketing, while Mario, the third partner, is the owner of the property. Despite two of them perform another job in their lives, the business is going well and there is a continuous search for tradition and innovation.

Why they chose this name
Tannur is an Arabic name from which comes the Sicilian name «tannura» which means kitchen. The owners chose this name when they rediscovered an ancient kitchen wall inside one of the halls.

difficulties They overcame the initial bureaucratic difficulties thanks to the enthusiasm for their project. The restaurant was opened on 28 August 2015 after 7 months of bureaucratic troubles. The owners did not request funding for the opening. They faced everything with their private finances and payments instalments.

staff Five employees work in the restaurant at the moment. They become seven during the summer. The restaurant is close on Thursday and is open from 12:30 to 02:30 p.m. and from 07:30 to 10:30 in the evening .

Dishes They prepare some dishes of Sicilian tradition, with vegetables like aurbergines, courgettes, tomatoes, potatoes, peppers, onions and fish from the Mediterranean Sea. One of the most popular dishes is Pasta Tannur with almond pesto and ricotta, and another one is Stuffed Squid filled with vegetable couscous according to an Arab tradition. They use all local products. Their dishes change according to the seasons.

Prices Their prices range from 15 to 30 euros. The cost for two people with medium quality wine is around 55 euros for two courses choices between appetizer and first or starter and second or first and second with wine and dessert. The most popular dessert is Cannolo al cucchiaio while the most chosen wine is Nero d'Avola or Etna Rosso.

customers Their customers belong to an age group ranging from 55 to 80 years and they come, above all, from Northern Europe: Norway, Sweden, United Kingdom and Germany. They already know what they want to eat and drink. They are very familiar with wines. Making an annual average, the number of foreign clients is equal to the number of customers in Italy. The period in which they work less is the month of February.

advertising The best advertising is the positive reviews of their customers on Trip Advisor, a very followed website by foreigners. Despite their restaurant is not just in the town center, their customers reach them thanks to the quality of these reviews. They do not have their own website, they have just links that bring customers back to the Facebook page and they are also on the guide of Italian Touring Club.
