2 What is Yeast? It’s a fungus. There are many kinds of yeasts.
Some of them can be used for fermentation. For example, to make bread or beer, etc. Some species can cause infections.

3 Definition Yeasts are eukaryotic, single-celled microorganisms. They are classified as members of the kingdom Fungi. Saccharomyces cerevisiae, a species of yeast converts glucose to CO2 and alcohols by fermentation. Then the CO2 is used in baking and the alcohol is used in alcoholic beverages.

4 What is Fermentation? It’s a metabolic process that breaks down carbohydrate in absence of O2. The products are organic acids, gases, and alcohol. Occurs in yeast and bacteria, and also in muscle cells during absence of oxygen.

5 Mechanism of fermentation by Yeast
Yeast contains an enzyme called Zymase. Zymase catalyzes the breakdown of glucose to produce ethanol and CO2. Then CO2 dissolved in water and Carbonic acid is formed which is a weak acid.

Prepare all the flasks Flask 1 with water + yeast. Flask 2 with water + yeast + glucose. Flask 3 with water + yeast + glucose + and then boiling in heater for 3 mins. Flask 4 with water + glucose. Flask 5 with water + yeast + flour.

9 Cover the flasks with balloons and leave for 24 hours for the fermentation to take place .

10 After 24 hours the results are seen
After 24 hours the results are seen. Fermentation takes place in only two flasks and gas is produced. Flask 2: “Yeast + Glucose + Water” Flask 5: “Yeast + Flour + Water”

11 Dissolve the gas from balloon to water.
