2 STEP #1 Before you begin, sanitize work area with bleach solution. Click green arrow to go forward or red arrow to go backward

3 STEP #2 Determine the number of pans of lasagna you will need to prepare. 1 pan = 24 servings 2 pans = 48 servings 3 pans = 72 servings…

4 STEP #3 Gather Equipment Large mixing bowl or pan 2 full hotel pan(s) (12 x 20 x 2) Measuring cups Rubber spatula

5 STEP #4 Gather Ingredients Ground Beef Marinara Sauce Lasagna Noodles Cottage Cheese Shredded Mozzarella

6 STEP #5 In a large mixing bowl or hotel pan combine the ground beef and marinara sauce. For each pan of lasagna combine 7.5 cups beef + 1 bag marinara.

7 STEP #6 Spray pan(s) with pan release.

8 STEP #7 For each pan, layer the ingredients as follows: 1 st Layer: 4 cups sauce (beef and marinara)

9 2 nd Layer: 7 uncooked noodles

10 3 rd Layer: 4 cups sauce

11 4 th Layer: 3 cups cottage cheese

12 5 th Layer: 2 cups shredded mozzarella

13 6 th Layer: 6 uncooked noodles

14 7 th Layer: 4 cups sauce

15 8 th Layer: 3 cups shredded mozzarella

16 STEP #8 Spray aluminum foil with pan release. Tightly cover the pan(s) with parchment paper then with aluminum foil.

17 STEP #9 Bake the lasagna at 375 degrees F for 40 minutes or until the lasagna reaches 165 degrees F. Carefully remove the pan from the oven and uncover. Continue baking for 5 minutes, uncovered, or until the surface of the lasagna is golden brown.

18 Let the lasagna stand for 15 minutes at room temperature before cutting.

19 Cut each pan 6 x 4 (24 servings) Grade K-12 serving size: 1 slice

20 Suggested Service Pre-dished into black boats or Directly onto trays on the line **Hold for hot service at 140 degrees or higher**
