4 OBJECTIVES OF FAST COOLING SYSTEMS
To comply with the laws on fresh and dairy products Local laws DANONE laws (final temperature under +6°C) Increase Quality Texture and taste Example: for set yogurts, you have to stop the acidification in cup (cooling from 42°C to 20°C in 30 min) Homogeneity and Shelf life of your products A good system cools down all of the products and especially the core of the pallet. The faster you cool down, the longer the shelf life of your product is For natural yogurts (without additive), bacterial development is fast and has to be stopped quickly Reduce costs Most of users have optimized their cost by sending the cooled products directly after cooling and wrapping (the stay in a cold room for few days to finish the cooling is useless) Optimize the ends of lines (with mechanization and automation for instance)

Packaging is not only for logistics or marketing: it is also a part of the cooling process. For the same product, cooling time can last from 1h to more than 10h only depending on packaging. The design of packaging has to take into consideration 2 points: Cold air has to be in contact with the products Air must be able to circulate through the whole pallet

Objective: to force cold air to go through the pallet as fast as possible Problems generally met: by-pass all around the pallets (example: if 40% by-pass % of cooling time) Cold air velocity is too low problem of homogeneity and quality Cooling systems are not adapted to the variation of size of pallets (tall and small pallets) Most difficult products to cool down
