6 Chantal BREGEON GONET Chantal, is Head of Sales
she is a travelling salesman at heart. In the early 2000s, Chantal took advantage of being overseas in Singapore with her young family to make a name for her champagnes in Asia. Today her champagnes are in more than 30 countries worldwide and she lives in Miami to settle down the distribution in the US.

7 Pierre GONET Pierre, an avid hunter and a true man of the land…
He is both the wine maker and the cellar master. Degree in viticulture and oenology in Beaune He works relentlessly to improve the winemaking process, to ameliorate the quality of his wines and the culture of his vines. He gained experience in Bourgogne concerning barrel ageing. Pierre ceaselessly explores the palette of nuances the mineral character his Chardonnay has to offer.

Its grapes are from parcels in Le Mesnil and notably Montgueux: the “Grand Cru” of the Aube, perched upon a strange and solitary hill in the middle of a plain, where lush Chardonnay fruit comes to life. No sugar or sulphites are added at the dosage stage, revealing the subtleties of a Chardonnay in its purest form. Tasting : A nose of pastry lightly toasted evolves into floral notes of delicate iris and lime-tree. On the palate, supple and ripe fruit as well as candied apricot and peach are topped with a touch of grapefruit and lime. It leaves you with its freshness and lingering finish. Perfect for a distinctive and refreshing aperitif. Bottling : 75 cl

Made from 100% Grand Cru Chardonnay parcels of the family vineyard in Le Mesnil-sur-Oger, this cuvée is aged for 6 months in oak barrels and then bottled and cellared for at least 3 years. Tasting : The delicate and elegant nose opens up to candied fruit (citrus, apricot) and gingerbread. Its woody forest bouquet develops with finesse unveiling a multitude of remarkable aromas. Its attack is mouth-filling, dominated by ripe citrus. This champagne offers a lovely freshness and a lasting finish worthy of the best wines. Bottling : 75 cl / 150 cl

(92/100) Stefan Tylzer (16,5/20) Gault & Millau Un Millésime de Coeur Origine : Récolte Août Tirage Mars 2008 L'hiver fût doux et la cycle végétatif démarra très tôt au printemps. La fleur s'épanouit fin mai avec un temps déjà chaud, puis les conditions climatiques se gatèrent pour revenir au beau fixz et venté fin Août. Le rendement était intéressant et les raisins sains. La concentration en sucre et l'équilibre avec l'acidité nous laissa présager un grand millésime. Aujourd'hui le Millésime 2007 a acquis une belle maturité. Dégustation : Vin clair à reflet vert. L’effervescence est présente et rythmée. Au nez, on note des arômes de pain grillé et de fruits secs (noisette) soutenus par des arômes de fleur d’acacia. La bouche puissante et charnue révèle des notes briochées et de beurre frais au début pour terminée par des notes de terroir plus minérales allant vers les agrumes (citron, pamplemousse). La finale est longue et témoigne de l’origine de son grand terroir. Ce vin a un potentiel de garde de 10 ans. Bottling : 75 cl (2007) / 150 cl (2005)

Low level of Dosage ( average of 7 grams per liter) : to let the wine Express the Soil/Terroir and to Reflect the House Style, Minerality. Long Time before the “Dégorgement" : at least 3 Years for the Non-vintage, at least 7 Years for the Vintage. Fragmented Vinification : Plot by Plot Wine-making. Use of "Culture raisonnée" (sustainable development) during the process : no insecticide, use of pheromone trapping method, no grasskiller, less chemical products.
