2. Unsaturated Fats Contain at least 1 double bond between carbon atoms
Does NOT contain the maximum number of hydrogen atoms
Contains 1 double bond between 2 carbon atoms

The healthier fat
2 Types of Unsaturated Fats:
Monounsaturated:
- Contains only 1 double bond
Polyunsaturated:
- Contains multiple double bonds

3. Hydrophobic Hydro = water ; phobic = fearing
Substances that repel water away; will not mix
Best example of hydrophobic substances are lipids
This is the reason why oil and water do NOT mix
A Phospholipid bilayer is hydrophobic and prevents water from entering or leaving your cells (cell membrane)

4. Hydrophilic Salt Alcohol Sugar Baking Soda
Hydro = water ; philic = loving
Substances that mix with water and will NOT repel it
Examples of Hydrophilic substances are:
Salt
Alcohol
Sugar
Baking Soda
Anything that will dissolve or mix in water is hydrophilic
