1 ratatouille

2 Ingredients 1x10ml spoon oil 1 onion, chopped
1 clove of garlic, crushed 1 small aubergine, diced 1 green pepper, chopped 1-2 courgettes, sliced 2 cans chopped tomatoes 1x5ml spoon mixed herbs 1x15ml spoon tomato puree

3 Equipment Saucepan, measuring spoons, chopping board, knife, wooden spoon, can opener.

4 Method 1. Prepare the vegetables.

5 2. Fry the onion and garlic in the oil for 5 minutes.

6 3. Add the aubergine and fry for 5 minutes.

7 4. Add the pepper, courgette and tomatoes.

8 5. Stir-in the herbs and tomato puree.

9 6. Bring to the boil and then simmer for 20 minutes.
