familiarize students with the structure of fatty acids, glycerides, and phospholipids familiarize students with the structure and role of membranes consider transport mechanisms across membranes including the concept of water potential surface area volume ratios and its consequences

describe the chemical structure of fats and oils and how they are formed from glycerol and fatty acids distinguish between saturated and unsaturated fatty acids describe the structure and properties of phospholipids understand the basis of the emulsion test for lipids
