Stuffed tomatoes and peppers
with rice and spices

Ingredients 6 ripe tomatoes (medium size) 6 peppers (medium size)
2 dry onions 3 big potatoes 1 cup of raisins 1 spoonful of pine seeds 1 cup of olive oil ½ kilo of rice ½ bunch of parsley 1 spoonful of concentrated tomatoes ¼ kilo feta cheese a little sugar salt – pepper – spearmint – oregan

1. We cut the onions and the parsley in very small pieces.

2. We cut horizontally and open the peppers and the tomatoes
at the opposite side from their stems, keeping the cut part.

3. We empty the tomatoes with a little spoon and put their inner part in a strainer. We keep it and we put aside the tomato juice.

4. We wash the rice very well and mix it with the raisins, the pine seeds, the onions and the parsley. We put all ingredients in a bowl. 5. We add the pine seeds, the half spoonful of concentrated tomatoes, some olive oil, the salt, the pepper, the spearmint, the oregan and the feta cheese cut in small pieces.

6. We put some sugar at the bottom of the tomatoes and peppers and fill them with the mixture.

7. We peel the potatoes and cut them in big pieces, leaving them for a while in a bowl with the tomato juice, some olive oil, salt, pepper, and the rest half spoonful of concentrated tomatoes.

8. We put the stuffed peppers and tomatoes in a shallow metal tray and put the potatoes among them.
9. We drop over them some tomato juice mixed with some water.

10. We bake in the oven for 1 ½ hours in 180oC.
