Looking at the inside of this food truck, ask the students what type of food truck do they believe this is. The answer is a coffee shop. Ask the students to observe the ally way where the employees would stand it’s not much but enough to walk and be able to prep. Discuss the prep area, where the coffee would be made. Observe the sink, and the toaster as well. Looking at the picture it’s difficult to see where the window is to serve. Ask the students where they would put the window?

What type of food truck is this? Answer ice cream truck! Ask them what made them come up with that conclusion. Point out the storage, walk alley, and window for serving.

Have students express what type of food truck this could be and when they state, ask them to explain why they came up with the conclusion. Answers should explain because of the appliances in the truck. There is no real answer for this food truck. One answer could be a sandwich truck because of the prep area and the coolers could hold drinks. Discuss the alley way and how this is a larger food truck. Notice all the storage and appliances.

What type of food truck could this be? How did they come up with this station. There is no real answer. But looking at the food truck there is a grill and a stove top. Point out the sink and the two windows? Have a discussion about the windows. Is there two lines? Could there be an order window and a prep window?

One for washing hands and one for cleaning. Looks like there is a commercial refrigerator. Notice the storage as well.

Project Time Design an inside of Food Truck
Let’s discuss what the difference is of appliances in brick and mortar vs. food truck. Some examples larger prep area, larger appliances, more room to move, larger storage areas. Take this inconsideration when designing the inside of your food truck, you will not be able to have the luxuries a brick & mortar would have. This is also, why food trucks have simple menus due to their limit space of prepping storing several food items. Now you will be designing your own food truck. The design drawing needs to be like the one of the last three slides. Whichever the student prefers to use. The students can use their menu from lesson 2 if they completed it to help them design the inside of the food truck. You must include the appliances you need for the type of food you will be selling, include, a window, alley way, storage and a sink.
