1 Altering the yield Why ? To change the quantity

2 Yield What is the yield ? 6 servings 2 loaves 4 quarts 2 servings
The amount of food or the number of servings a recipe makes. 2 loaves 3 dozen 4 quarts 6 servings 2 servings

3 How many do you need? Half Double
12 6 Double 12 6

4 Steps to decrease the yield of recipe
Changing the Yield Steps to decrease the yield of recipe Divide the number of servings you want by the original yield ( the answer is number you will use to calculate the new amount of each ingredient) Multiply the amount of each ingredient by above answer. Convert measurements as needed. Calculate new amount for each ingredient in recipe. Example: You want 18 cookies, the recipe for a batch of cookie dough yields 36 cookies. 18/36 =1/2 Example: The original recipe calls for ¼ cup of cream. 1/2 x 1/4 = 1/8 cup of cream Example: 1/8 cup = 2 Tbsp 4

5 Blueberry Muffins Yields 12 muffins
To increase yield you would Multiply original amount by 2 to double recipe, 3 to triple recipe, etc. Use recipe to calculate Blueberry Muffins Yields 12 muffins 2 eggs 2 Tbsp. sugar 2 ½ tsp. baking powder 1 c. milk 2 c. flour ¾ c. blueberries ¼ c. oil ½ tsp. salt Half the recipe (x 1/2 ) eggs ______ flour _____ baking powder _____ 1 1 c. 1 ¼ tsp. b. Triple the recipe (x 3) milk ______ sugar _____ blueberries _____ 3 c. 2 ¼ c. 6. Tbsp.
