How many grapes.. There are thousands of grape varieties and every year, several new discoveries and crossings are made. Before a wine is poured into your glass, it has undergone a complicated process… at least that’s what wine connoisseurs say. This is partially true, but do not feel discouraged! Influences in taste Of course there is a little more to it: the preparation method (for example whether or not it is wood aged) influences the wine’s quality and flavor. However, the wine’s character is mostly determined by the grape, soil, and climate. Wines differ from each other because of these aspects. A wine from a cool climate will usually contain more acids than a wine from a hot climate, even if they are made from the same grapes. We will delve deeper into this in the subsequent chapters! Grapes skins and seeds Did you know that a grape’s pulp is white and that, therefore, you can make white wine from red grapes if you remove the skins before fermentation? The skins, stems, and seeds contain tannic acid (tannins) and often add a rough mouth feel to red wines. In white wines, the skins, stems, and seeds have been removed before fermentation, so you will not experience this roughness. Did you know that a grape’s pulp is white and that, therefore, you can make white wine from red grapes if you remove the skins before fermentation?
