Tips for proper mixing Choose a bowl that is the right size for the job Choose the best tool/appliance for the job Place a wet cloth under the bowl Add dry ingredients to wet ingredients a small amount at a time Use a rubber scraper to remove food from the bowl

Mixing foods at high vs. low speeds
High-speed mixing introduces more air into the mix

Separating eggs Place an egg separator across the rim of a bowl
Tap the egg slightly on the edge of the bowl Carefully pull apart the egg Put egg into separator, allowing the white to drip into the bowl

Breading Covering such foods as fish and chicken with a light layer of flour, crumbs, or cornmeal before cooking
