The Government standards for food safety are: Standard 3.2.1 Food Safety Programs (proposed) Standard 3.2.2 Food Safety Practices and General Requirements Standard 3.2.3 Food premises and equipment (3) The model food safety bill suggests that a documented food safety plan complying with standards can be used as defense of due diligence. (2) The accepted industry system for food safety is called the Hazard Analysis of Critical Control Points (HACCP). This system produces a documented food safety plan.
