NDSU EXTENSION Beef Quality Assurance Lisa Pederson, Beef Quality Assurance Specialist Lisa Pederson, who teaches the course, will use the ServSafe curriculum from the National Restaurant Association’s Educational Foundation. She is a certified ServSafe instructor. The class is designed to assist food establishments develop a food safety plan or update their plan with current information.
