Water is polar Has opposite charges on molecule because electrons are more attracted to oxygen

Hydrogen bonds form between water molecules Hydrogen bonds that form between water molecules account for some of the essential and unique properties of water Attraction keeps water liquid over a wider range of temperature Energy required to break multiple hydrogen bonds causes water to have a high heat of vaporization

III. Hydrophilic vs. Hydrophobic
Hydrophilic: any substance that likes water (WATER-LOVING) Ionic or polar substances Some hydrophilic substances dissolve in water (ex. Salt) and others don’t (cotton) Hydrophobic: any substance that doesn’t like water (WATER-FEARING) Usually nonpolar/non-ionic substance
