HACCP based approach to food safety

OFFSRS IMPLEMENTATION
Partnership with Fed/Prov/Territorial bodies Coordination with S&T Unit Coordination with AAFC To follow the HACCP based approach, each NPO first list all the inputs on Form 2 and constructs a production flow diagram which is Form 3. The flow diagram is put together by the HACCP team and represents a typical farm operation for the commodity being analysed. All the production steps must be present on the flow diagram. The NPO HACCP team ensures this and then the FPT TR team also reviews this when conducting their review of the generic model. The NPO HACCP team then list all potential hazards associated with each production step and input. The hazard descriptions must be detailed, listing what the specific hazard is and the cause. For instance at the step of “treating” a beef animal with an injectable drug the hazard a could be “a drug residue above MRL due to not following the manufacturers label instructions”. The detailed hazard descriptions are placed on Forms 5, 6, or 7 as applicable. This is done for each input and production step.
