Figure 1 The factors that may contribute to the propensity for reflux disease and theoretically then may increase the susceptibility to BE and AC are shown. These factors include obesity, eradication or lack of Helicobacter pylori infection, and nitrate metabolism. Nitrates are ingested through green vegetables, converted into nitrite in the saliva, and converted to the free radical nitric oxide within seconds of contact with ascorbic acid in the gastric juice.
