Jello is made up of sugar, water and a special compound called gelatin
Gelatin is what gives it the jello characteristic It’s a form of collagen that makes up human and animal connective tissue It gives our skin its stretchiness

Where does the gelatin in our jello come from?
At room temp. the gelatin has a structure similar to DNA but when we add the heated water it breaks it down Breaks the weak gelatin bonds and we get free floating proteins

As the mixture cools, the helices begin to tightly reform with pockets of water in the middle
Helix makes it strong and the water gives it the wiggle

Pineapple Have any of you read the directions for jello before?
Pineapple has a digestive enzyme called bromelain which digests gelatin

We’re going to test what happens when you add fresh pineapple puree to jello and canned pineapple juice
