Carbohydrates are used to store energy and as structural components of cells Animal cells store energy in the complex carbohydrate gylgogen Plant cells store energy in complex carbohydrates called starches Complex carbohydrates can be broken down into individual sugar molecules, which store energy in their chemical bonds Digestion of carbohydrates starts in the mouth with the enzyme amylase which breaks the bonds between individual sugar molecules Carbohydrates that cannot be digested are called dietary fiber (roughage) glucose
