How to set your knife skills station

Step 1: Lay down a non-skid mat or Damp towel
Step 1: Lay down a non-skid mat or Damp towel. it must not extend past the edge of your cutting board.

Step 2: Place cutting board on top of non-skid mat
Step 2: Place cutting board on top of non-skid mat. Make sure it is secure, not moving.

Step 3: Place a clean towel, folded in half, fold towards the cutting board, on your dominant hand side. (ex: right side if right handed)

Step 4: Place your Knife next to the board, blade facing the board, your bench scraper handle facing away from the knife and your peeler in the bottom corner, under the Scraper.

Step 5: place 2 containers in the center of the table for sharing
Step 5: place 2 containers in the center of the table for sharing. One for waste, one for cuts. Use water only if cutting potatoes.

Step 6: Cover top of cutting board with plastic wrap only if vegetable needs peeling (ex: potatoes or carrots) do not cut on the plastic wrap!!!!
