Part I: Preparing Ingredients

Step 1. Provide ingredients
1 cup of Cold streamed rice [left in a fridge over night or at least 5 hours] 7-8 shrimps & 1-2 eggs 1-2 tablespoons of oil 1-2 teaspoon of soy sauce & sweet source 5-6 pieces of a tomato, green & yellow onions, cucumber & 1 piece of a lime Optional: ½ teaspoon of chopped garlic Ingredients.jpg © Benchamat. Step 3. Wash the vegetables

Step 4. Prepare (dry) vegetables

Step 5. Prepare (wet) vegetables

Step 6. Prepare shrimps Wash and peel 7-8 shrimps or as you needed.

Step 7. Put all in one plate

Step 8. Turn on stove Turn on stove and adjust at medium heat.

Step 9. Heat a pan & vegetable oil
Heat the pan and put 1-2 tablespoons of vegetable oil. Wait until the oil gets hot. Tips: Don’t worry! You can use any types of pans, but the size of the used pan should be big enough to cook easier. Use medium heat, typically. Pan and oil.jpg © Benchamat. Used with permission.

Step 10. Put shrimps & yellow onions
Put shrimps and yellow onions. Fry them until the shrimps are Almost done (the color changed). Push them into one side of the pan to have more room for eggs. Tips: Yellow onion will be sweeter if it is done well, so it should be put at the beginning step. But if you want to keep it be pungent, you can put it last with the other vegetables. Step 11. Put egg & garlic garlic Put 1-2 eggs as needed. Stir eggs but leave them keep 2 colors; yellow and white. Put ½ teaspoon of garlic (optional). Wait until eggs are Almost done. Step 12. Put rice Put Cold streamed rice on the top of eggs.

Step 13. Put soy sauce & sweet sauce
Put soy sauce and (Thai) sweet sauce on all around. If you cannot find (Thai) sweet sauce, use sugar instead. Tips: Thai sweet sauce makes rice not only sweeter but also brown, so rice will look more delicious. Sauces.jpg © Benchamat. Used with permission.

Step 14. Mix rice Mix rice, sauces, eggs, shrimps, yellow onions, and garlic together until they blend all. Tips: Use the spatula to cut eggs into small piece and use the back of the spatula to press rice if rice is hard and stick together. Mix rice and sauces © Benchamat. Used with permission.

Step 15. Put tomato& green onions
Put tomato and green onions and mix them all again. You can also add other types of vegetables. Tips: Vegetables may be chopped into small pieces if you make for kids and use broccoli instead of green onions or use the vegetables that kids preferred. Put vegetables.jpg © Benchamat. Step 16. Fry & mix all continuously
Fry and mix all continuously for several minutes or until the vegetables were done enough [or as you like] Tips: You may have to reduce heat during this step so that shrimps will not become too hard, but still hot enough for vegetables. Mix all.jpg © Benchamat. Used with permission.

Step 17. Test & improve You can test your food now and try to (quickly) improve it as you like by adding sauces, salt, sugar, chili, or pepper. Tips: You may have to reduce the heat level if you are a beginner and not familiar with cooking. Some seasonings need a heat for melting. Step 19. Move to a plate Move the shrimp fried rice to a plate.

To make your food look nicer and tastier, decorate your dish with sliced cucumbers and a piece of limes, and then it is Ready to serve.
