Higher level practical skills and techniques in safe and hygienic food preparation Sensory properties of food and their importance in food design Understanding of nutrition, and the chemical reactions that occur in all of the key food groups as they are prepared Importance of the design process in food production Latest trends and developments in the food industry

4 ACCELERATED STUDY Proven high standard of student work and success, including an accelerated student being selected as one of the best 12 Food folios in the State in being selected in ‘Top Design’ exhibition in the Melbourne museum.
