Forward “Over time, the kitchen most often has been defined in the United States as a hub of household activity and the space in which new technology is often introduced to the American family” (Nasardinov 1). The kitchen has always held a special place in the hearts of humankind, and for me the kitchen offers a sense of security, comfort, happiness, and curiosity. It is a place where we gather as family and friends to laugh and share a communal meal. The food brings us together in a way that is free of daily stress. Maybe that is because it is something we all share, regardless of our beliefs and all the other things that get in the way of just being happy together. The kitchen offers us a place for laughter and fun and the goodness of being together. The kitchen is also the hub of the family. It is where we drop our keys as we walk in the door, go through the mail, and do our homework. The kitchen nourishes us in ways that go beyond the food itself. The kitchen reaches into our souls and invites us to breathe in the sweet aroma of home. It is also a place of creativity and art. The kitchen is a palette with spices to match our emotions and take us to new places. I hope that you appreciate reflections from the past as well as your own reflections of what the kitchen means for you as you read through these pages. Wishing you nourishment and joy as you consider your own recipe for defining what the kitchen means to you. Elizabeth

Kitchens Throughout History: Compare & Contrast
While kitchen designs have changed over time, kitchens themselves have always played a central role in the life of a home. In pioneer homes, kitchens were often at the center of the home; they were not separate from the main living area and would often double as a place to read by candlelight, sew, and wash laundry (Nasardinov 1). In the early American South, kitchens were not connected to eating areas in an effort to keep the smells emanating from the kitchen away from more common areas of the home. Kitchens in the past used the hearth to cook the food and warm the house. They often had a back door that led to the outside to make deliveries such as milk and other household essentials easier (Miller 1). Ice boxes were simple boxes that held blocks of ice and the food was cooked over the hearth. Modern kitchens use electrical appliances such as refrigerators, stoves and ovens, and dishwashers that make the work of the cook much easier. We have running water that comes out of a facet and we usually get our groceries by shopping at the store where we have a plethora of choices. Like kitchens of the past, our kitchens offer a place for family and friends to gather.
