HERB MARINATED CHICKEN QUINOA TABBOULEH
Ingredients (serves 6) Directions: In a bowl, combine herbs, lemon zest, and dressing Place chicken breasts in a large freezer bag or coverable dish Pour marinade over chicken and marinate overnight in the refrigerator Preheat the oven to 350° (This recipe is also great grilled!) Bake chicken 30 to 35 minutes or until the internal temperature is 165° Ingredients (serves 6) Directions: Follow directions on the bag or box of quinoa, let cool and set aside Chop the parsley, tomato, and onion Combine chilled quinoa, chopped vegetables, and parsley Whisk lemon juice, zest, pepper, cumin, and olive oil until well combined Finish salad by pouring dressing over the quinoa and vegetables Stir until the ingredients are evenly distributed 6 each 1 Tbsp 1.5 Tbsp ½ tsp ½ cup Boneless, skinless chicken breasts Fresh parsley, chopped Fresh basil, chopped Fresh rosemary, chopped Lemon zest Italian dressing 2 cups ½ cup 2 ¼ 3 Tbsp 2 ½ tsp ½ tsp 1 ½ Cooked quinoa Fresh parsley Plum tomatoes Red onion Olive oil Ground cumin Black pepper Lemons, zest and juice Nutrition Facts: 220 calories, 26 gm protein, 1 gm carbohydrate, 12 gm fat, 0 gm fiber per 4 oz portion Nutrition Facts: 200 calories, 5 gm protein, 23 gm carbohydrate, 11 gm fat, 4 gm fiber CUCUMBER TOMATO SALAD ASPARAGUS ARUGULA SALAD Ingredients (serves 4) Directions: Peel, seed and slice cucumbers into half moons Chop tomatoes into ½ inch pieces Julienne the red onion Combine all ingredients in a bowl Chill in refrigerator before serving Ingredients (serves 6) Directions: Wash and trim asparagus Arrange asparagus on roasting pan and drizzle with olive oil Place asparagus on the grill and cook through, turning to cook all sides Cut asparagus into bite-sized pieces Combine ingredients in a bowl and serve 2 ¼ 1 Tbsp 1 tsp 1/8 tsp Fresh cucumber Medium tomatoes Red onion White vinegar Chopped parsley Chopped dill Kosher salt Olive oil White pepper 1 lb 1 tsp 1 cup 1 pint 2 oz Fresh asparagus Olive oil Fresh arugula Fresh strawberries Feta cheese Nutrition Facts: 30 calories, 1 gm protein, 5 gm carbohydrates, 1 gm fat, 1 gm fiber Nutrition Facts: 62 calories, 3 gm protein, 8 gm carbohydrates, 3 gm fiber
