TAPAS Tapas is not a particular type of food. Anything can be tapas, it´s just a small portion of paella, croquettes, ham and cheese on toast, almost anything. As long as it is small and served with your drink (either free or at a surcharge), it is tapas.

DRESSED POTATOES Although this “tapa” is very common in summer, it is also popular during “Romería”. INGREDIENTS 1Kg. Potatoes 2 eggs 2 cans of tuna 1 cup Olive oil 2 tablespoons Salt 2 small onions 100 gr. Olives Parsley branches 2 tablespoon vinegar

GAZPACHO Spanish cold tomato soup is the perfect meal in summer to cool down. INGREDIENTS ½ Kg red tomatoes 1 small onion 1 Green pepper 2-3 cloves garlic 1 small cucumber Vinegar Salt Water Olive Oil

SPANISH OMELETTE The spanish omelette is one of the most famous recipes in Spain, with lots of variations. INGREDIENTS 1 small onion (optional) 3 médium potatoes 2 large eggs 3tablespoon Olive Oil (divided) Vegetable oil for frying the potatoes Salt and pepper to taste

PAELLA It´s typical in Valencia , it can be made with meat or seafood

SPINACH WITH CHIKPEAS Extra virgin olive oil
1 head of garlic (12 teeth) 3 tablespoons of sweet paprika 6 cups of spinach (250 g) 1/2 cup of water (125 ml) 3 and 1/2 cups cooked chickpeas (650 g) Salt (optional)

PORK CHEEK IN WINE SAUCE
Iberian pork cheeks - 8 units Onion - 1 unit Carrot - 1 unit Garlic cloves - 6 units Dried oregano - 1 teaspoon Red wine ml Water ml Flour - 2 tablespoons Olive oil- 60 ml Black pepper - ¼ teaspoon Salt to taste

RICE PUDDING Rice pudding is a typical dessert made by slowly cooking rice with milk and sugar. It is served cold or hot. INGREDIENTS 1 liter of milk 200 grams of white rice 125 grams of sugar. 2 cinnamon sticks Several small pieces of lemon peel. 25 grams of unsalted butter.

CUSTARDS The custards are a dessert of Spanish gastronomy. It is a creamy dessert made with milk, egg yolks, sugar and flavours such as vanilla or lemon. INGREDIENTS 1 liter of milk 200 grams of sugar. Liquid cream 6 egg yolks The skin of half a lemon. 30 grams of cornstarch A vanilla bean 1 cinnamon stick Cookies

TORRIJAS The torrija is a delicatesen of European origin with a long tradition in Spain. It consists of a slice of bread that is dipped in milk or wine and egg, fried in a skillet pan with oil. It is sweetened with honey, molasses or sugar and flavored with cinnamon. INGREDIENTS A loaf of bread. 4 eggs 1 liter of milk 1 cup of sugar. A piece of lemon peel and another of orange. A sprig of cinnamon sticks. A teaspoon of cinnamon powder. Frying oil: 3/4 liter.
