This is a cheese made in Basilicata, in the mountains surrounding the valley of the river Agri. In this area Pecorino (or Incanestrato, because forms are made to dry in baskets) has the unique feature to be produced by adding a small quantity of goat milk, which gives it a particular flavor, with notes "wild" that normally in pecorino not occur. During the maturing forms are anointed with oil and lard and rubbed with stalks of wild fennel. The Pecorino Basilischi product of both forms of a few kilograms of weight in ways that very large (about fifty kilos), which require to be aged of at least one year. At present, there are only 12 pieces of Formaggio Basilischi in the world.
