Traditional Slovak food Presentation by pupils of 8th class Typical slovak meals come from the period of privations and poorness. Today we are used to preparing them as traditional meals to keep a healthy life style.“

Ingredients 1 sausage 300 g smoked meat salt caraway pepper dried mushrooms 1 onion red pepper 500 g sour cabbage pepper potatoe cream Cabbage soup

Instructions Wash the cabbage and put it into a large soup pot with some water. Add the sausage and smoked meat. Add a bit of salt, pepper, caraway and cook it. Put the mushrooms into a bowl and pour some warm water. Leave for a while. Put some oil into a saucepan and fry the onion in it. Add red pepper. Pour into the soup. Add also the mushrooms and grated potatoe. If you like, you can add some cream.

Instructions Peel the potatoes and grate them. Ad done egg and the flour. Make dough. It should be not very watery or tough. Add a little more flour in the case i tis too watery. Add 1 teaspoon of salt. Boil water in a large pot with 2 spoons of salt. Drop small pieces of the dough (about 1 – 2 cm long) into boiled water (the water have to boil all the time during the preparation). Cook them for few minutes until they float on the water. Then take them out with a strainer. Dice bacon and fry it. Put „bryndza“ (slovak sheep cheese) on top of the meal.

Chicken soup with home made pasta – noodles Traditional soup for Sunday lunch Ingredients : ½ Chicken 3 Carrots 3 Parsley 1 Kohlrabi 1 Celery 1 leaf Cabbage Green pepper Tomato Onion 2 cloves Garlic Water Salt Pepper Persley and celery tops

Instructions Put the chicken into a large pot with cold water and cook it. After 15 minutes add the vegetables, salt and pepper. Cook the soup on the simmer for about 1 hour, until the meat is cooked. At the end add some parsley and celery tops. Serve with diced meat, carrots and parsley tops.

Home made pasta - noodles Instructions 3 eggs 500 g flour salt

Put the flour into a bowl, add 3 eggs, a bit of salt and some water. Make dought and leave for 15 minutes to rest. Roll out the dought as thin as you can. Leave for a while to dry. Cut the dought into very narrow stripes. Cook them in boiled water for 2 minutes with a bit of salt. Take them out of water with a strainer and add to the soup.

Traditional Slovak drink Traditional and also unic Slovak drink is „zincica“. It is sour milk made of sheep milk by farmers at the sheep farms. Another drink, which is very popular among Slovak people is Kofola. In comparison with Pepsi or Coca – Cola it contains 30% less sugar, a little more caffeine and it does not contain phosphonic acid. Kofola was introduced in 1962. At the Christmas time it is used to drink Christmas punch. It is slightly alcoholic drink, thus it is not allowed to children. They like helping to prepare it for their parents, friends and acquaintances.

Christmas punch Ingredients: 1 l red wine ½ kg sugar ½ l rum 5 lemons 4 clove 1 piece cinnamon a few raisins a few satsumas

Instructions Cut the lemons and squeeze the juice from them. Pour the wine into a saucepan and boil it. Add the lemon juice and grated rind of one lemon, sugar, cinnamon and cloves to the saucepan. Boil the mixture. After a few minutes use a strainer and filter the mixture. Put the raisines and satsumas into the hot mixture. When it is cold you can add a little of rum. Pour the mixture into the glasses and serve it.
