A papaya is in many different colours due to the season an how ripe it is. Some papayas are green on the outside and a deep orange red on the inside. What is the colour of the papaya? How is the papaya used in food preparation? ISLAND RICE PUDDING- Ingredients: Units: US | Metric 2 cups water 1 cup aborio rice 1 pinch salt 2 cups milk 1/4-1/2 cup sugar 1 teaspoon cinnamon 1 tablespoon grated fresh ginger 1/2 cup raisins 1 cup dried shredded coconut 1 cup fresh papaya, diced Directions: 1 Bring water to a boil in a medium saucepan. Add rice & salt. Cover & cook on low heat until almost all the water is absorbed, about 15 minutes. 2 Add milk & cook uncovered, stirring frequently until about 1/2 the milk is absorbed. Stir in the 1/4c sugar, cinnamon, ginger, and raisins. Continue to cook until the rice is soft & the milk is absorbed. 3 Stir in coconut. Gently fold in papaya. Taste & add more sugar, if desired. 4 serve hot or cold.

Papaya salsa- 1 large papaya 1/4 red bell pepper, coarsely chopped 1/4 green bell pepper, coarsely chopped 1 jalapeno pepper, seeded and minced 2 tablespoons chopped fresh cilantro 1 1/2 teaspoons fresh lime juice 1 1/2 teaspoons orange juice 1/2 teaspoon red pepper flakes Directions: 1 Peel, split, and seed papaya; chop coarsely. 2 Mix together all ingredients in a bowl. 3 Serve over grilled fish such as ahi tuna, swordfish; also grilled chicken Ingredients:

Baked papaya- 3 papayas, firm but ripe (the sweeter Hawaiian variety is probably best here) 1 vanilla bean, cut into 6 pieces 6 teaspoons butter 12 teaspoons brown sugar Directions: 1. Preheat the oven to 350 deg F. 2. Peel the papayas, split them in half lengthwise and remove the seeds. 3. Arrange the prepared papayas, cut side up, in a large baking dish filled with approximately 1/2 inch of water. 4. Place one piece of vanilla bean, 1 tsp butter and 2 teaspoons brown sugar in the center of each papaya half. 5.Bake for 45 minutes, or until tender. Ingredients:
