Set the Stage! In today’s lesson we will turn this:

Into this: Caramel Toffee Cheesecake! Set the Stage

Ingredients and tools Let’s introduce our players! For this lesson we will need: 1/2 cups sugar 2 tablespoons light corn syrup 3 tablespoons butter 1/3 cup heavy cream 4 packages cream cheese, softened 1 1/2 cups sugar 1 tablespoon vanilla 4 eggs, lightly beaten 3 cups graham cracker crumbs 1/2 cup Heath toffee bits 1 pinch of salt 1/2 cup brown sugar 2 sticks butter (1 cup) 1 can of redi whip whip cream (extra creamy)

Act 1- Homemade crust For this step you will be using a rolling pin and a 1 Gallon plastic bag to make your home made crust. Put your graham cracker Squares in the plastic, lay the bag on its side and beat it like you’re the lead drummer for The Blue Man Group.

Act 1- Homemade crust After you have beaten your crackers into submission, pour in 1/2 cup toffee bits, one pinch of salt, 1/2 cup brown sugar and 3 tablespoons of melted butter and mix together. When finished, press your crust into a 9-inch spring form pan then bake at 300° for five minutes. When finished place in freezer until cheesecake filling is ready.

Stage Note- Homemade Caramel Sauce We will be making our OWN caramel sauce. Who needs store bought, when you’re cooking with class! Step 1. Combine ½ cup sugar and 2 tablespoons of light corn syrup in a medium sauce pan stirring occasionally with a rubber spatula. Step 2. add 3tbsp butter and stir until melted and then add 1/3 cup heavy cream and stir until it's all combined and then take off heat.

Act 2- Cheesecake Filling For this act we will be using our Artisan design Kitchen Aid mixer. Step 1. Combine 4 8-oz. packages of cream cheese with 1½ cup of sugar and mix until sugar is dissolved. Step 2. Add 1tbsp vanilla extract and ¼ cup caramel sauce.

Act 2- Cheesecake Filling Step 3. Add 4 eggs lightly beaten and then set your kitchen aid until batter is silky smooth!

Act 3-Final Act Now that your batter has been whipped to perfection its time to marry your batter to your chilled graham cracker crust! Once you have poured your batter into the crust pan, place it in the oven at 400° for 1 hour and 20 minutes. After your cheesecake has finished baking, here’s a tip, crack open the oven to about 4 inches leave the pie in the oven for an additional 30 minutes to bake in the additional heat.

Closing Act After your cheesecake has cooled down, mix your remaining toffee bits with your remaining caramel sauce. Gently spread your caramel/toffee mixture across your cheesecake with your rubber spatula. Make sure the entire top of the cheesecake is covered.

Dress Rehearsal Now its time to dress that cheesecake up! For this step I decided to use store bought canned whip cream. Bring your whipped cream around your cheesecake, building on each layer to create a decorative ring around your cheesecake.

The Big Reveal! -Your last step will be to add some additional toffee bits on your whipped cream ring as a delicious garnish! This is a great finishing touch that will bring you a standing ovation and rave reviews!
