1 My Self Directed Learning Project about Celiac Disease By: Emily Martell

2 About Celiac Disease Celiac Disease damages the inside of your body such as headaches, growth, sickness, and numbness. I had sickness. The average time to get diagnosed with Celiac Disease is 8-10 years. Near 9 th. 5 foods with gluten in them are pizza, fried dough, cake, cookies, and bread. 4 ingredients that have gluten in them are wheat, oats, barley, and rye. There is no cure but there is a treatment.

3 About Wheat One bushel of Washington wheat contains approximately one million individual kernels (berries). One 60-pound bushel of Washington wheat provides about 42 pounds of white flour, 60 to 73 loaves of bread (depending on the size of the loaf and whether the bread is whole wheat), or 42 pounds of pasta. Crackers main ingredient is unbleached flour (unbleached flour is flour is NOT gluten free) from soft red or soft white wheat.

5 About Barley Barley grains are commonly made into malt in a traditional and ancient method of preparation. Barley was grown in about 100 countries worldwide in 2007. The world production in 1974 was 148,818,870 tons; since then, there has been a slight decline in the amount of barley produced worldwide.

9 About Oats Oats are grown in temperate regions. They have lower summer heat requirement / greater tolerance of rain than other cereals, like wheat, rye or barley, so are particularly important in areas with cool, wet summers, like Northwest Europe; they’re even being grown in Iceland to help prolong growing season. Oats are generally considered "healthy".
