Information  Tiramisu is an Italian dessert that is traditionally served as an afternoon “boost”  Contains both caffeine and alcohol in a creamy mixture served in layers  Many varieties exists, but this recipe does not use any eggs (cooked or raw)  Anyone who likes coffee, cheese and chocolate will really like this 2

Ingredients (serves 8)  20 Lady’s Fingers  2 shots (60mL) espresso  ½ cup (120mL) coffee  1 cup (240mL) heavy whipping cream  1lb mascarpone cheese  ½ cup granulated sugar  3 tablespoons (44mL) rum  Cocoa power  Shavings of unsweetened dark chocolate 3

Equipment  2 medium sized bowls for mixing  Electric mixer or hand mixer  8x8inch pan  Plastic wrap 4

Steps  Step 1: Chill whipping cream and bowl. Mix coffee and espresso and chill.  Step 2: Whisk the whipping cream until it reaches stiff peaks using either an electric mixer or by hand 5

Steps  Step 3: Put the cheese, sugar, and brandy into a medium bowl and mix until smooth. Add more sugar or alcohol as desired. 6

Steps  Step 4: Fold in the whipped cream to create the cheese mixture. 7

Steps  Step 5: Soak lady fingers in espresso for a couple seconds, rotating to coat all sides. Place lady fingers side by side on bottom of a 8x8-in. pan. 8

Steps  Step 6: Place half the cheese mixture on lady fingers in pan. Smooth with a spatula or spoon. 9

Steps  Step 7: Sift cocoa powder liberally on surface of layer. 10

Steps  Step 8: Apply second layer of lady fingers and remaining cheese. 11

Steps  Step 9: Sift cocoa powder and half of chocolate shavings. 12

Steps  Step 10: Cover in plastic wrap and chill.  To serve, use the remaining chocolate shavings by sprinkling a bit onto eight plates. Cut tiramisu into eight rectangles and serve on plates. 13

Conclusion  How long does it take?  30-60 minutes to make  +4 hours to chill and serve  Why chill the bowl & whipping cream?  Cream whips better when chilled  Any ingredient substitutes?  Cream cheese + milk = mascarpone substitute 14
