Salads Consist of an array of ingredients, often combined with a dressing and eating hot or cold Salads are a versatile menu item that can be served as an entree, main course or dessert, or as an accompaniment to other dishes Increasing in popularity in hospitality establishments due to an increasing trend for healthier lifestyles

Made from a variety of ingredients and mixed with a dressing.

Fruit Salads May consist of one type of fruit, or a mixture of seasonal fruit. Can be served with yoghurt, sweetened ricotta or ice cream.

Warm/Cold Salads Most salads are served cold.
Warm salads have the addition of warm ingredients. E.g. Warm potato salad or Char grilled lamb salad.

Modern Salads Are based on flavour combinations of traditional salads, with modified ingredients. Served stacked high on flat plates rather than in bowls.

Originate from other countries Are well known around the world E.g. Thai Beef Salad & Tabbouleh
