Apple-Lentil-Salad

Ingredients: - 250 g lentils - 16 cherry tomatoes - 2 apples - 2-3 twigs of thyme - 5 tablespoons vinegar -10 tablespoons applejuice - 4 tablespoons oil - salt and pepper - 50 g rocket salad or other salad leaves

- Cook the lentils in water until soft and drain them - cut the tomatoes in halves - peel the apples and quarter them, remove the core - cut the apples in small and thin slices - pluck the thyme leaves from the sprigs

- Mix vinegar, apple juice, oil and the thyme leaves - add salt and pepper

The vinaigrette should look like that

Mix the apples, lentils and tomatoes with the vinaigrette

Before serving add the salad leaves
