2 Millet Information Used as staple food in China, India, and Africa before rice. Currently sustains 1/3 of world's population Small, round yellow colored grain with mildly sweet, nut-like flavor Examples of uses: porridge, breads, cabbage rolls 11% protein content Provides 2.3g fiber per cup (cooked)

3 Millet Patty Ingredients Water Millet Chopped onions Grated carrots Corn starch Garlic salt Guar gum Parsley

4 Procedure 1) Cook millet in covered pot with water for 25 minutes. 2) Mix onions and carrots with cooked millet, garlic salt, and parsley. 3) Sift guar gum and corn flour into mixture. 4) Mix corn starch with water and add to the millet mixture. 5) Form patties and bake at 400°F for 25 minutes.
