8 Caracterisation of Roots and Tubers  High water content (75-95%);  low nutrient densitydifficult to storage  Rich in carbohudrates (sugar or starch), 50- 70% on DM basis;  Moderately low CP content (8.5-11% on DM basis);  Moderately low CF content (3-10% on DM basis);  For ruminants: too much readily available carbohydrates (rumen acidosis);  CP and CF supplementaions are required.

9 Root Crops  Rich in sugars (sucrose, glucose, fructose);  Leaves: soiled  danger of diarrhoea;  For breeding swines;  Not for fattening pigs: bulky;  For ruminants: less than 15 kg/day (rumen acidosis + betain  fishy taste of the milk).

10 Potatoes  For feeding: surplus of white potatoes;  For swines and ruminants;  For swines: cooking or steaming - improves the starch digestibility, - neutralises the solanin (antinutritive);  For ruminants: cut in slices, - Cattle: 10-15 kg/day, - Sheep: 2 kg/day.
