What is Food Science? Food science is the study of the nature of food, the causes of deterioration, the principles underlying food processing, and the improvement of foods for consumers It focuses on what happens to foods before you eat them

What is Food Science? Also address nutrition, or the study of food components and their use by the body to sustain life It began to evolve when technology moved food preparation from the home to the factory

Food, preparation techniques, and preservation methods were discovered through: trial and error (ex: drying grains) by accident (ex: cheese) Earliest forms of food processing include: drying, salting, and smoking

Began to grasp the science behind many food products Ex: bacteria’s effect on food spoilage and human health As a result, the canning process was invented Mass production methods began in the food industry Canning process was invented in France 1st US canning plant was opened in New York in 1812

Machinery for farming increased food supply Convenience items developed for military Consumers initially avoided these items WWII caused many women to enter workforce = less time for food preparation Steam power machines like plows, reapers, and threshers were able to do work in a few minutes what used to take all day Baking powder mass produced 1856 Commercial yeast available 1868 Self-rising flour marketed in 1890 Pillsbury and Campbell’s were founded in 1869

Early regulations were formed due to adulteration of food, or lowering quality and safety of a product ground pepper (gravel, leaves, twigs) vinegar (sulfuric acid) milk (chalk, starch, borax) sugar (sand and dust) Borax is sodium borate, white powdery, found is detergent

USDA (US Department of Agriculture) developed to oversee food production and agricultural research Now the USDA Oversees meat, poultry, and processed egg products Inspects processing plants Develops dietary guidelines Regulates organic foods

To combat hunger: Develop safe, tasty, nutritious, low-cost foods Ex: incaparina – cereal that contains 28% protein Develop new production methods Hydroponic crops – grown with roots suspended in liquid nutrient solutions Biotechnology – alters organism to create new or improved products crops altered to resist insects Herbicides kill weeds without damaging crops

Develop foods for special needs such as armed forces, sports, and health conditions Developed food analogs, natural or manufactured substances used in place of food or food components Vegetable proteins that look and taste like meat Splenda Non-dairy creamer

Changing raw products into processed foods Ex: blanching Dehydrating food products and special packaging techniques Ex: NASA Teflon coating We now know blanching increases nutrient content Nasa has their own group of food scientists that led to vacuum packaging, teflon coating, and freezer to oven cookware.
