INTERNSHIP ENROLLMENT REQUIREMENTS 2.0 GPA or above. B or better in program class. < 5 unexcused absences per semester. No suspensions during semester preceding an internship.

Complete 30 hours or more over 6 weeks. Write answers to 10 interview questions (good practice for interviewing skills). Submit time sheets at end of internship. One evaluation from employer (have to show good performance at internship site). EASILY EARN ½ CREDIT/SEMESTER FOR COMPLETING AN INTERNSHIP

Submit journal with 15 completed responses (journal contains scripted questions)or 5 page essay answering journal questions that you select. Note: internships rotate every 6 to 8 weeks so you can participate in more than 1 during the school year. EASILY EARN ½ CREDIT/SEMESTER FOR COMPLETING AN INTERNSHIP

BUDDY V’S TLC’s “Cake Boss” star, Buddy Valastro has made his way from New Jersey to Las Vegas, to bring you Buddy V’s Ristorante at the Grand Canal Shoppes at The Venetian | The Palazzo. CARLOS BAKERY Carlo's Bakery, featured on Cake Boss, is known for our delicious pastries, desserts & cakes. Carlo’s is a family owned bakery featured on the TLC hit show Cake Boss. Carlo’s, originally opened by Carlo Guastaffero in 1910, was acquired by Bartolo Valastro Sr. in 1964. Because of the Valastro family’s dedication to quality and excellence, Carlo’s has received national recognition. Master Baker Bartolo Jr. “Buddy” has been featured in numerous publications, such as Modern Bride, and The Knot. Buddy’s cake design was voted by the Today’s Show viewers as best cake in America. Maggiano’s Little Italy opened the doors of its first location on the corners of Clark Street and Grand Avenue in Chicago, Illinois November 11, 1991. What happened next, as they say, is history. The portions of Italian–American cuisine were large, reminiscent of a Sunday night visit to their grandmother’s house, or as they say in Italy, nonna’s casa! The recipes were simple, authentic classics, many of them coaxed out of Italian grandmothers, mothers, and aunts whose ideas of a recipe were a pinch of this and a sprinkle of that. With some trial and error, the chefs celebrated the birth of many of Maggiano’s signature dishes. Maggiano’s Little Italy

No Money. I got the worst grade on my business plan for a college class. The professor said a chicken finger restaurant would never work. The banks said the same. Oil Refinery. I took a job as a boilermaker working 90 hour weeks in the L.A. refinery to raise my own money. Alaska. Then I fished commercially for Sockeye Salmon in Alaska, working 20 hour days in the dangerous conditions. Home Again. When I returned, I had the money I earned, and was able to get a SBA loan. Just enough to start the first restaurant. Renovate. The first Raising Cane’s®, “The Mothership”, was an old building I renovated myself with help at the entrance of LSU. The Mural. During the renovation, we found an old mural on the original brick wall that inspired the design of our Raising Cane’s® logo. First Day. The first Raising Cane’s® opened in 1996. We were so busy, we stayed open ‘til 3:30 a.m. It was great to work with such a fun, dedicated crew! Raising Canes…the back story

Kerry Simon (born June 17, 1955) is an American celebrity chef and restaurateur based in Las Vegas. Simon is also known by the moniker "Rock n' Roll Chef", given to him by Rolling Stone Magazine. He is the executive chef and proprietor at his namesake restaurant "Simon" at Palms Place in Las Vegas. His other restaurants include Simon LA, in Los Angeles, California, Simon Prime in Atlantic City, New Jersey, along with KGB and Carson's Kitchen in Las Vegas. CARSON KITCHEN

Rounding out a twelve year tenure as Executive Pastry chef at Aureole, Las Vegas and a 20-year career spent working with notable chefs including Charlie Palmer, Charlie Trotter and Gray Kunz, all leading the way to Chocolate & Spice. Her talents have earned her national recognition as she has been seen in the pages of Bon Appétit, Shape, Runners World and more. An internship allows you to discover your strengths in a “no pressure” environment. The expectations are that you do your best and try your hardest to learn from your own experience. IT IS GREAT PRACTICE FOR THE REAL WORLD!

If you are interested in an internship, let your program teacher know.
