3. 3 限制酶 — Cut Restriction enzyme or restriction endonuclease 一種能選定特定 DNA 片段攻擊的核酸酶（一 種蛋白質）。 許多細菌天生就會產生，用來自我防禦。 細菌產生的限制酶有兩種特性：  只有特定的短序列（ restriction site ）會是攻擊的 目標。  細菌會在自己的 restriction site 加上化學保護（甲 基化, methylated ）。
