4 Learning Objectives  List the names and abbreviations of the units of measure most commonly used in the foodservice industry  Demonstrate your understanding of the relative sizes of the measuring tools used in the foodservice industry  Recall the equivalents of volume measures without references  Recall the equivalents of weight measures without references  Explain the difference between weight and volume measurements  Define a fluid ounce and explain how it differs from an ounce

5 Volume vs. Weight  Volume- the space filled by a liquid, gas or solid. -Tesapoon (Tsp.) - Tablespoon (Tblsp.) - Fluid Ounce (Fl. oz.) - Cup (c.) - Pint (pt.) - Quart (qt.) - Gallon 9gal.)  Weight- the heaviness of a substance. - Ounce (oz.) - Pound (# or lb.)

6 Volume vs. Weight  Liquids are measured by volume  Solids and dry ingredients are measured by weight.  Liquids can be accurately measured by weight.  Some small critical dry ingredients may be measured by volume.
