To produce a DHA fortified line extension of their successful Simbi pre- and probiotic yoghurt for the Spanish market. To select a source of DHA that could be easily incorporated into their production process. To select a source of DHA that would not adversely affect the natural flavour of their product, and would permit the development of other flavours.

Yogurt Process Summary Homogenize 2500/500 psi at 60 C Pasteurize at 88 C for 60 sec Collect Yogurt Mix at 43 C Inoculate Yogurt Mix L. bulgaricus L. thermophilus Incubate at 43 C until pH4.6 Heat Milk to 60 C Add Solids, Stabilizers and DHA Oil Add Flavor Stir yogurt Cool to 27-32 C Transfer to Yogurt Filler & Package Refrigerate DHA Addition Pre-Pasteurization

Simbi explains……………………. Why do we need the omega-3 fatty acid called DHA? Why do we need the omega-3 fatty acid called DHA? –Vital fatty acid, that the body cannot synthesis in adequate amounts. Therefore need to provide it in our diet. –DHA is especially important for the growth, development and function of the brain and eye. –Studies show that consumption of long chain omega-3 fatty acids can have an important beneficial effect over the behaviour and learning capacity of small children. –DHA may also play a role in other conditions such as post natal depression, hyperactivity, attention deficit disorder, and memory loss.
