What is defined as “junk food”? Food that has low nutritional value, typically produced in the form of packaged snacks needing little or no preparation.

Dextrose is a natural form of sugar that helps give the fries their perfect golden color. Sodium acid pyrophosphate is added to keep the potatoes from turning gray after freezing and before they are cooked at the restaurant. Citric acid is added to preserve the freshness of the oil. Dimethylpolysiloxane is also added to reduce foaming and oil splattering. TBHQ is an antioxidant that acts as a preservative, allowing the oil to remain fresh from the supplier all the way to the restaurant.

Why do we love it? We humans LOVE junk food because: Pleasurable sensation of eating it Perfect combination of sugar, salt, carbohydrates, and fats Dynamic contrast (different sensations in the same food, like a candy shell covering chocolate) Salivary response (the more you salivate, the more your tongue gets coated by the flavors) Rapid food meltdown (food dissolves too quickly in our mouth so our brains think we aren’t eating enough) Sensory specific response (more than one taste sensation) Calorie density Memories of past eating (you loved the taste of it in the past, so you’re more likely to eat it again)
