Some questions you might ask yourself: How do I learn professional culinary skills? How do I justify to my principal/superintendents the importance of this profession? Where do I order professional culinary equipment from? How do I receive the best prices?

Moving from Home Economics to Culinary Arts Where do I order my food from? How do I pay for all of these items? There is no money in my school district; all of our budgets are being cut. How do I earn the respect of my peers being that this is a profession/career path for my students, not just baking cookies for one period a day?

How do I learn Professional Culinary Skills? Many of us went to college and had one foods class that did not teach us any sort of Professional Culinary Skills; so how are we suppose to be able to teach these skills to our students? Professional Development: Seminars and classes that will teach the secondary instructor professional culinary skills. Joliet Junior College Summer Instructor Boot Camp Johnson & Wales Culinary Institute of America Local Community Colleges Wilton School Professional conferences sponsored by the American Culinary Federation

How do I learn Professional Culinary Skills? I really want to attend these seminars and classes, but my school district has no money to send me to any of these places. How do I fund them? Scholarship opportunities through the National Restaurant Association (www.nraef.org)www.nraef.org Scholarship opportunities through the Illinois Restaurant Association (www.illinoisrestaurants.org)www.illinoisrestaurants.org Perkins funding (will discuss in more depth when we get to equipment purchases)

Where do I order Culinary Equipment from? How do I order professional equipment and receive the best prices? Start with a rep from that company. Need to obtain quotes from each of those companies in order to receive the best possible price. Need to build a relationship with the company. Never order directly from a catalog. You will be paying way too much!

Where do I order Culinary Equipment from? Culinary Equipment companies: Edward Don JB Prince Kitchen Aid: All schools receive school pricing at a 50% discount, but you have to call and make the connection with the educational rep. Mercer Tool: Cutlery kits Uniforms: Chef Revival, Chef Wear, Happy Chef, etc. Calling, making a connection, and asking for a bid is the only way you will receive the best prices. Schools will always get a better price.

Where do I order my food from? Going out to the grocery store takes hours of your time that you don’t have! Some schools are lucky to have shoppers, others have peapod, I didn’t have any of those so I set up with a foodservice purveyor that delivers right to my door! How do I pay for all of these items? Most everyone’s budget is being cut, but we are one of those lucky entities in which Federal Perkins money is available for us along with the Illinois CTEI Grant. How do I know if I have these funds? Ask your Vocational Administrator in your district how these funds are being spent. Are your classes regionally aligned with the state? Each CTE student enrolled in an orientation level course your district receives $5 from the state and for every training level course your district receives $50 from the state. Your classes must be regionally aligned in order for you to receive this funding.

How do I pay for all of these items? Does your school district have an educational foundation? Can you write for a grant for a piece of large equipment that you wish to have in your classroom?
