How does giving a zero fulfill the purpose of grading?

Estelle’s mean score with the zero is a 67.5%, whereas a 90% without the zero all together. With the purpose for grading in mind, which of the two mean scores more accurately reflects Estelle’s performance? As Unruhe mentions in the article, if a 60% had been assigned where the zero was, the mean score would have been an 82.5%. Where and why do you think he came up with the 60%?
