Lipids: Fats & Oils 2003-2004
3
Lipids 2003-2004 Large biomolecules that are made mostly of carbon and hydrogen with a small amount of oxygen (sometimes Phosphorous).
4
Lipids Monomer subunits Glycerol and 3 fatty acids Examples fats oils Waxes 2003-2004
5
Lipids Function: Stores energy very concentrated (pure) 2 times as much as carbohydrates Cell membrane Forms protection (ex. Waterproofing) insulates body
6
Structure of Fat 2003-2004 not a chain (polymer) = just a “big fat molecule”
7
Lipids Examples Steroids -structure is a series of connected hexagonal rings. Cholesterol, hormone, cortizone. Triglyceride - glycerol with 3 fatty acids; fats in food, associated with cholesterol. Phospholipid - glycerol with 2 fatty acids; make up cell lipid bilayer membrane. Fats : insulates, stores energy, solid at room temperture Oils - liquid at room temp.
8
Saturated fats Most animal fats solid at room temperature Limit the amount in your diet contributes to heart disease deposits in arteries 2003-2004
9
Unsaturated fats Plant, vegetable & fish fats liquid at room temperature the fat molecules don’t stack tightly together Better choice in your diet 2003-2004
10
Test for Lipids Brown paper bag test
