We then follow the classical vinification for white wines, with electronically controlled fermentation of the must at 18 oC temperature. Following fermentation, wine stays within inox tanks at electronically controlled temperature and protected within nitrogen atmosphere. Temperatures remain favourable during summers due to the northern winds and the sea breeze that cools down the atmosphere. Varietal composition: 100% Liatiko. Vinification techniques: The grapes are harvested into small, ventilated crates. We apply the classical vinification for red wines. The grape skins remain with the must for 7 days at controlled temperature. The wine undergoes malolactic fermentation before ageing in casks. Ageing: In oak casks for one year, 100% French. Classification: Dry red wine Winemaker's notes: Mavroliatis is produced by a red small-berried, variety named "LIATIKO", one the oldest of the Mediterranean vineyard. It is grown on the hills around the area of DAFNES. It reserves to the connoisseurs of good wine a unique taste experience. It is what we could call "fervent wine". Serving suggestions: Excellent choice to accompany game, red meat as well as yellow cheese. To be served in a cool ambient temperature (16o-18o C).

Soil: Clay soil of pale brown colour. Climate: Typical Mediterranean with mild winters and hot summers. Climate that facilitates photosynthesis and the production of wines of high sugar content. Temperatures remain favourable during summers due to the northern winds and the sea breeze that cools down the atmosphere. Varietal composition: 100% Liatiko. Vinification techniques: Over-ripe grapes are harvested into small, ventilated crates and dried under the sun for 6 days to increase their sugar content. Ageing: In oak casks for one year, 100% French. Classification: Aged sweet, red wine Winemaker's notes: A naturally aged, special sweet red wine of Appellation of origin of superior quality “DAFNES”. Made from liatiko variety, it is characterised by its dominant colour of light tile, and emerging aromas of cherry, raisins, chocolate and dried fruit. Serving suggestions: You can savour it as an aperitif or to accompany sweets, ice-cream, dried or fresh fruit and spicy cheese. To be served at 8-10oC.
